Fresh, fresh, fresh which usually but not always means early in the morning. The earlier you can get your fresh Pastel, the better. There’s nothing like a perfectly formed warm and flaky pastry, straight out of the oven. You can have them on their own but they go exceptionally well with a cafe espresso and some people like to put a sprinkling of cinnamon or powdered sugar on top.
That’s a hotly contended issue and there is no real definitive right answer for that, although a couple of places did seem to pop up as firm favourites. Ultimately a pastel, like a fingerprint or snowflake is a personal thing and your preference may grow or change over time or from day to day. You might also prefer the ambience or setting of one place over another. We encourage you to go out and try as many different places as possible.

Candy Unique has good ones but not traditional sized (they are huge). Also Gomba cafe ones are 👌👌
In second place was a little bit surprising but the quality, consistency and price of LIDL made it a firm favourite with the locals. It had 3 votes.
Joke Lidl!!! But I have a guilty pleasure...everytime I shop in Pingo Doce I'll take a café with a hot pastel de nata....yummy!!!
So there you have it Gomba & Lidl seem to be the top two, but we've included a few other favourites and some places to try on this Pastel map of Lagos.
That’s a great question and there are a few takes on the recipe. The original Pasteis de Belem keep their exact pastry and filling recipes a closely guarded secret and actually have separate private preparation areas for both, and only 2 or 3 of their chefs know the exact recipe. However there are quite a few video guides you can watch which follow other chefs and their take on the recipe.
1 cup of wheat flour
Mixed with enough water for a dough consistency
a pinch of salt
1 and 1/2 cups of butter for puff pastry
10 tablespoons of sugar
9 Egg yolks
2 cups of milk
First of all you’ll need to mix the flour with salt & water and then beat this until it’s nice and loose in your hands. Next it’s time to spread the dough across a flat surface or preparation area. Use a large pasta roller until the mix is exceptionally thin. Finally, brush the mix with a layer of butter.
Repeatedly fold the dough and roll it several times then add another layer of butter and repeat the process another two times.
Next you’ll want to cut the dough into 3 pieces and make up some lovely little rolls.
First of all blend the sugar and egg yolks together until they create a nice mix. In another pan bring some milk up to a simmering boil.
Add a few tablespoons of milk to the sugar/egg mix and stir well. Then add the entire sugar and yolk mixture into the milk pan and stir until slightly thickened.
Cut the rolls of dough into about 1cm cubes and squish them into a baking tray for small muffins. Fill the pastry mix with the cream filling and bake in a preheated over to around 250C. Bake these pastels until they are golden brown on top. The cooking process will depend on the oven but should be around 30-40 minutes.
